Texas Cake
1 stick Butter
4 tbs. Cocoa
2 cups Flour
½ cup Buttermilk
½ tsp. Salt
1 tsp. Cinnamon
½ cup cooking oil
1 cup Water
2 cups Sugar
1 tsp. Vanilla
1 tsp. Baking soda
2 beaten eggs
Combine butter, cocoa, cooking oil and water in a pan and bring to a boil. Sift flour and sugar. Stir hot mixture into sifted flour and sugar. Add buttermilk, salt, cinnamon, vanilla, soda, eggs and mix well.
Pour into a greased 9 x 13 pan. Bake at 400° for 20 to 30 minutes. Remove from oven and top with the following frosting:
1 stick butter
6 tbs. Milk
4 tbs. Cocoa
1 lb. Box confectioners sugar
Melt butter and add cocoa and milk. Add sugar. This makes a soft icing glaze to be poured over the cake.
1 cup of pecans and/or 1 small can coconut can be added to icing before pouring on cake.
