Dandelion Sauté
1 lb Italian Sausage
4 cups chopped Dandelion Leaves
3 cups Chopped Vidalia Onion
1/3 cup Olive Oil
2 Cups Grated Carrots
1/3 Cup Soy Sauce
1 TBS Cooking Wine
2 Cloves of Minced Garlic
Black Pepper to Taste
1. Sauté the onions in olive oil.
2. When soft, add the sausage, carrots, dandelions, garlic, wine & soy sauce.
3. Cook for 10-20 minutes until all flavors meld and the carrots are soft.
Serves 4-6
***Pick only the new leaves on the Dandelion plant to use as they are the most tender. Make sure to cut off the stems as they can be a tad bitter. Do not use the flower, it also tastes bitter.
