Default Vidalia Onion & Georgia Peach Chow Chow

Vidalia Onion & Georgia Peach Chow Chow

Take 1 gallon of cabbage ( Usually about 2 medium heads )
2 quarts of green tomatoes
1 pint of Vidalia onions
2 cups of Georgia Peaches
1 pound of sugar
1 TBS mustard
1 TBS ginger
2 TBS cloves
2 TBS salt
3 TBS Cinnamon
1 1/2 quarts of Vinegar

Chop cabbage, onions,peaches & tomatoes fine, and add in rest of ingredients, except for peaches. Boil until cabbage is tender, remove from heat and add peaches. **Make sure you do not put in the peaches until after the cabbage has been boiled!** Return to heat and bring to a boil.

Then pack, boiling hot, into clean, heated canning jars, leaving only a 1/8 inch head space. Place canning lids and rings on jars and tighten. I usually turn the jars upside down so that all the heat is on the seals. I don't turn them back upright until the jars are completely cool.

This recipe doesn't have to sit before it's ready to eat. After it cools, you can start tasting it.


**** If you would like a little added heat to your Chow Chow, then add in a couple of Cayenne peppers (diced) during the first boiling phase. ****

I would never in a million years thought about adding peaches. Do you ship?

LMAO For you I will indeed! I'll get on making up a batch this week. I have yet to go get some canning jars. I'm running behind this year.
